Gluten-free lentil rolls with superfood

Recipe for Gluten-Free Lentil Buns with Superfood:
Ingredients:
- 200 g dried red lentils (cleaned)
- 20 g psyllium husk (not powder)
- 1 tbsp olive oil
- 1/4 cup water (about 60 ml)
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon lemon juice
- 1 tbsp of any superfood from Superfood & berries.
- Topping: Optional seeds (e.g. sesame seeds, flax seeds or sunflower seeds)
Instructions:

Prepare the lenses:
Start by rinsing and washing the dried red lentils thoroughly. Let the lentils soak for at least two hours to soften and absorb liquid. It is important not to skip this step, as it provides the right consistency and makes the lentils easier to blend. -
Mix the ingredients:
When the lentils have been soaked, drain the water and place the lentils in a blender. Add psyllium husk, olive oil, baking powder, salt, lemon juice, and any superfood of your choice. Blend everything into a smooth and lump-free batter. If the batter feels too thick, add a little extra water until it reaches a smooth consistency. -
Shape the rolls:
Preheat the oven to 200-225 degrees C and line a baking sheet with parchment paper. Take a small amount of dough and shape it into small rolls, about 4-6 pieces depending on the desired size. If you like, top each roll with any seeds for extra flavor and crunch. -
Bake the rolls:
Place the rolls on the baking sheet and bake in the oven for about 20-30 minutes, or until they have a nice golden color and a light tap on the bottom sounds hollow. -
Let cool down:
Let the rolls cool on a rack before serving. They are perfect as a snack, for breakfast, or as a side to soups and salads.
